Giving Ground Beef Its Due Glory

When I was eleven, I declared myself to be a vegetarian. I don't remember why - it was likely the cool thing to do at the moment. My mother rolled her eyes at me but put on a brave face as she agreed to meatless spaghetti sauce and plenty of PB&J sandwiches and mac n' cheese.

My vegetarian period lasted three days. Turns out, McDonald's doesn't make a non-meat burger, and what's the point of eating just the fries? Since then, I've never been tempted to go meatless again.

My husband is even more of a meat lover than me. When we first met, I remember he described himself as a "carnivore" and declared that vegetables were "stuff that food ate." (Thankfully, he has since learned to embrace some vegetables to round out his diet.)

There are all kinds of exquisite cuts of beef out there, many touted as the best part of the cow, but today I'd like to pay homage to the lowly staple of ground beef. Ground beef is often seen as the cheap, red-headed step-child of the culinary world, reserved for such non-gourmet classics as casseroles, sloppy joes, and meatloaf. But ground beef has more uses beyond food your great-aunt Wanda would bring to the family cookout in her slow cooker. I'd argue ground beef is the most versatile cut of meat and deserves a lot more respect in the world of meat.

No matter what, my downfall will always be the cheeseburger. Give me a well-cooked patty of good beef, and I'll always show up for the party. Sure, there may be thousands of cheap burgers shoveled out in fast-food chains daily, but a burger is certainly not classless. Many of the fancier restaurants I've visited still have a burger on the menu, only it's better prepared and served on a higher quality bun with more exotic toppings. Dressed up well, a burger can be a work of art. (My fav? An American Kobe beef burger with portobello mushrooms. Yum...)

I've been bouncing around on the BeefItsWhatsForDinner.com website looking for more proof that ground beef can be stylish, and I found a recipe I had to share with you: Ground Beef Stuffed Peppers. Sounds wonderful, right?

First, I should state up-front that I prefer organic, grass-fed beef. Your tastes may differ, but for my family we find organic, grass-fed beef to have a richer flavor, and I like knowing it's free of all those pesky added hormones and antibiotics.

Here's the recipe for Beef Stuffed Peppers:

Ingredients
1 pound ground beef
4 medium green, red or yellow bell peppers
3/4 cup chopped onion
1/4 cup uncooked regular white rice
3 tablespoons ketchup
1/2 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon black pepper

Sauce:
1 can (14-1/2 ounces) Italian-style stewed canned tomatoes, undrained
1 tablespoon ketchup
1/2 teaspoon dried oregano leaves

Directions:
1. Heat oven to 350°F. Cut tops off bell peppers; remove seeds.
2. Combine ground beef, onion, rice, 3 tablespoons ketchup, salt, 1/2 teaspoon oregano and pepper in large bowl, mixing lightly but thoroughly. Spoon into peppers; stand peppers in 8 x 8-inch baking dish.
3. Combine sauce ingredients; pour over peppers. Cover dish tightly with aluminum foil. Bake in 350°F oven 1-1/2 hours, until instant-read thermometer inserted into center of pepper registers 160°F.

Some of the best steaks I ever had were from a small VFW post and only $10 bucks for the meal. The prime rib was huge, I mean pounds of meat and the sandwiches you'd make the next day from the leftovers were delicious too.

I'm not a good meatloaf chef, I'm just not! Well, I found a recipe in Kraft foods once and made mini meatloaves in muffin pans. My family loves it, so now...I am a so-so meatloaf chef.

My favorite beef-related meal was when my husband and I wanted to celebrate an anniversary but didn't have a budget to do anything spectacular like go out to a fancy restaurant, so I made homemade surf 'n' turf with steaks on the George Foreman grill and these really huge tiger shrimp that were just about the size of a lobster tail. I overcooked the steaks, unfortunately, making them well-done when I usually prefer rare. The good news is that they made for excellent steak'n'eggs the next morning!

When I was younger we would always make steak sandwiches. Take a thin piece of steak, cook it with some garlic salt, put it on 2 pieces of bread with some mayo. SOOO good!

My fave "beef memory" is, as a teenager, instead of going out to dinner before homecoming, our group got together, and grilled out. The steaks we made actually came from my friends uncle, who had a farm. Most delicious steak I ever had.

I am a serious beef lover, and remember the day this city girl was at a friend's house in the country. Her dad chose that day to butcher a cow and let us watch. It was the day I decided I'd marry a farmer....and I did. Alas, mine doesn't raise cattle! :(

I love making meatloaf. I have a super simple and foolproof recipe for it! 2 lbs ground beef, 1 box stuffing (has all the herbs and breadcrumbs you need!), 1/2 c bbq sauce, 2 eggs, and a cup of water, bake till it's 160 degrees inside..it comes out perfect!

My memory involving beef is a wonderful one when I was a kid. We had a huge fire pit in the back yard with benches surrounding it where we would cook BBQ beef ribs and play games all througout the summer.

I would like ground beef added to macaroni and cheese. Beef for strength (protein)and macaroni for energy (carbohydrates).

Beef is a very good source of the amino acid L-Carnitine, which is important for fat metabolism.

My favorite beef meal is taco salad, I know it's boring but it's so delicious! I chop a whole lettuce, top it with two heaping spoons of mild salsa, two heaping spoons of extra lean ground beef, one crumbled taco shell and once in a while a sprinkling of Mexican mix cheese. It's a healthy way to get a robust meal in!

I think the recipe for Asian Beef & Broccoli Slaw Wraps sounds good! I love that they have lots of variety in their recipes!

Ages ago my parents had lent me some money that I could put towards the down payment on my house, so that I could assume the current mortgage rather than get a new mortgage with a high interest rate. I paid them off in three years, and as a thank you, took them out to dinner at one of the more exclusive restaurants in our area - we had Beef Wellington that was to die for!! So, they got a great meal AND their money back!

I remember when we were little and we would visit our grandparents in Costa Rica. They would literally killa cow and we would have a big family reunion BBQ (since most our family lives there). Those were good times.

When you say "meat" to a Texan, they are 100% sure you are talking about beef! Growing up in Texas, the scent of beef grilling certainly permeates your soul (or at least your taste buds!) When I moved away from Texas as a young adult, I was amazed that other parts of the USA sometimes cooked another type of meat and still called it BBQ! It's hard to imagine!
